Healthy Tuna Casserole

Ingredients

  • 3 cups uncooked noodles
  • 2 cans water packed tuna, drained
  • 1 can fat free cream of chicken soup
  • 2 T light Miracle Whip dressing
  • 1/2 cup skim milk
  • 1/4 cup frozen green peas
  • 1/2 cup diced roasted red pepper
  • 1 bunch green onions, sliced
  • 1 T melted butter
  • 1/3 cup whole grain Italian seasoned bread crumbs
  • 1/4 t. pepper

Directions

  1. Cook noodles according to package directions. Drain.
  2. Meanwhile, mix tuna, soup, Miracle Whip, milk, peas, red pepper and green onion.
  3. Pour tuna mixture into a medium size, 8x8, baking dish sprayed with cooking spray.
  4. mix butter, breadcrumbs & pepper.
  5. Sprinkle on top of tuna mixture.
  6. Bake at 400 degrees for 25 minutes or until bubbly.
