Ingredients

  • 3 c. cooked brown rice
  • 2 c. cooked turkey coarsely minced
  • 8 ounce pineapple chunks in juice liquid removed
  • 8 ounce waterchestnuts sliced and liquid removed
  • 1 med apple unpeeled, cored and minced
  • 1/3 c. macadamia nuts minced
  • 1/2 tsp salt
  • 1/2 c. plain yogurt lettuce leaves
  • 1/4 c. toasted coconut shredded

Directions

  1. Combine rice, turkey, pineapple, water chestnuts, apple, nuts and salt.
  2. Toss lightly with yogurt and 1 Tbsp. pineapple juice. Serve on lettuce leaves and garnish with coconut.
