Hawaiian Turkey Salad Recipe

Ingredients
3 c. cooked brown rice
2 c. cooked turkey coarsely minced
8 ounce pineapple chunks in juice liquid removed
8 ounce waterchestnuts sliced and liquid removed
1 med apple unpeeled, cored and minced
1/3 c. macadamia nuts minced
1/2 tsp salt
1/2 c. plain yogurt lettuce leaves
1/4 c. toasted coconut shredded
Directions
Combine rice, turkey, pineapple, water chestnuts, apple, nuts and salt.
Toss lightly with yogurt and 1 Tbsp. pineapple juice. Serve on lettuce leaves and garnish with coconut.
