Hawaiian Turkey Salad
Ingredients
- 3 c. cooked brown rice
- 2 c. cooked turkey coarsely minced
- 8 ounce pineapple chunks in juice liquid removed
- 8 ounce waterchestnuts sliced and liquid removed
- 1 med apple unpeeled, cored and minced
- 1/3 c. macadamia nuts minced
- 1/2 tsp salt
- 1/2 c. plain yogurt lettuce leaves
- 1/4 c. toasted coconut shredded
Directions
- Combine rice, turkey, pineapple, water chestnuts, apple, nuts and salt.
- Toss lightly with yogurt and 1 Tbsp. pineapple juice. Serve on lettuce leaves and garnish with coconut.
