Grilled Zucchini with Garlic and Lemon Butter Baste

Ingredients

  • 4 medium zucchini, trimmed, halved lengthwise
  • 1/4 cup (1/2 stick) butter
  • 1 TBSP fresh lemon juice
  • 1/2 tsp lemon-pepper seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/8 tsp curry powder
  • Grated Parmesan cheese

Directions

  1. Preheat barbecue (medium heat).
  2. Score cut side of zucchini halves diagonally about 1/4 inch deep at 1-inch intervals.
  3. Melt butter with lemon juice, lemon-pepper seasoning, garlic powder, oregano, and curry powder in heavy small saucepan. Season with salt and pepper.
  4. Brush seasoned butter on cut side of zucchini.
  5. Place zucchini on grill and cook until charred on all sides and just beginning to soften, about 12 minutes.
  6. Arrange zucchini on grill, cut side up, and sprinkle with cheese; close the lid of grill and cook until cheese just softens, about one minute.
  7. Transfer zucchini to platter.
