Grilled Veggies with a Yogurt-Cumin Sauce

This was so fresh and light. I really loved it. If you're using Greek yogurt, omit the sour cream.

I used squash, but I think sauce would be good with any Mediterranean type vegetable.

Ingredients

  • 1 c plain yogurt (you can use Greek, but leave out the sour cream)
  • 1 T sour cream
  • 2 T lemon juice
  • 1 heaping tsp ground cumin
  • 1 T minced garlic
  • salt
  • 4 yellow squash
  • 4 zucchini
  • olive oil
  • salt
  • pepper

Directions

  1. Slice the squashes length wise into even pieces, about an inch thick depending on the veggies.
  2. Coat in olive oil, salt and pepper.
  3. Spray a grill with nonstick spray and grill until tender; about 2-3 minutes a side.
  4. Mix yogurt, sour cream, lemon juice, cumin, garlic and salt together in a bowl.
  5. Serve along side or on top of the grilled squash.
