Ingredients

  • 4 lrg portobello mushroom, about 1 1/4 lb
  • 1/2 c. extra virgin olive oil
  • 1 lrg red bell pepper Rosemary Dressing
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. minced fresh rosemary
  • 1 x garlic, clove, peeled
  • 1/4 c. extra virgin olive oil

Directions

  1. Brush both sides of Portobello mushrooms with extra virgin olive oil. Place mushrooms and red pepper on grill. Grill till mushrooms are tender and pepper is blackened on all sides.
  2. Place pepper in plastic bag and let stand. Peel and seed peppers. Cut into 1/2" strips.
  3. Season mushrooms and peppers to taste and pour dressing over vegetables.
  4. Rosemary Dressing:Combine all ingredients in a food processor. With machine running add in 1/4 c. extra virgin olive oil till blended.
