Grilled Portobello Mushrooms And Red Peppers With Rosemary Dressing
Ingredients
- 4 lrg portobello mushroom, about 1 1/4 lb
- 1/2 c. extra virgin olive oil
- 1 lrg red bell pepper Rosemary Dressing
- 1 Tbsp. red wine vinegar
- 1 Tbsp. minced fresh rosemary
- 1 x garlic, clove, peeled
- 1/4 c. extra virgin olive oil
Directions
- Brush both sides of Portobello mushrooms with extra virgin olive oil. Place mushrooms and red pepper on grill. Grill till mushrooms are tender and pepper is blackened on all sides.
- Place pepper in plastic bag and let stand. Peel and seed peppers. Cut into 1/2" strips.
- Season mushrooms and peppers to taste and pour dressing over vegetables.
- Rosemary Dressing:Combine all ingredients in a food processor. With machine running add in 1/4 c. extra virgin olive oil till blended.
