Grilled Lobster Tails With Lemongrass Chive Butter

Ingredients

  • 4 x lobster, tails, (about 1/2 lb each) Lemongrass Chive Butter
  • 1/3 c. unsalted butter, melted
  • 2 stalk lemongrass, tender part only, finely minced juice from half a lemon
  • 1 x zest of one lemon
  • 2 Tbsp. minced fresh chives fresh cracked black pepper

Directions

  1. Bring at least 5 L (20 c.)water to a boil in a large pot . Cook lobster for about 4 min and remove from water immediately. (Cook 1 lobster at a time to keep water at a boil)
  2. Get BBQ ready by heating on high and brushing grill till very clean.
  3. Split tails in half lengthwise with a sharp heavy knife.
  4. Place tails, shell side up on grill along with all the claws.
  5. Grill about 5-6 min with lid up.
  6. Brush lightly with melted lemon grass butter.
  7. Lemongrass Chive Butter:Combine the butter with lemongrass in a small saucepan on low heat.
  8. Let simmer gently while items grill.
  9. With a spoon, skim off surface of butter.
  10. Add in the remaining ingredients just before serving with hot lobster meat.
