Grilled Chicken with Teriyaki Marinade

Easy and tasty grill to serve with summer sides. Best flavor is achieved by marinating at least 3-4 hours ahead of grilling.

Ingredients

  • 1/2 cup soy sauce
  • 1/3 cup dry sherry or wine
  • 1/3 cup brown sugar
  • 1/4 cup cider vinegar
  • 2 tablespoons sesame oil
  • 2 garlic cloves, minced
  • 1 inch fresh gingerroot, peeled & grated
  • 3 pounds chicken pieces - legs, thighs, breasts

Directions

  1. In a bowl whisk together soy sauce, sherry, sugar, vinegar, oil, garlic, and gingerroot. Remove 1/4 cup of marinade, cover and refrigerate til serving.
  2. Pour remaining marinade in large zip-type bag; add chicken pieces, seal bag and refrigerate. turning occasionally 3-4 or more hours.
  3. Grill chicken over medium heat about 35 - 40 minutes, reaching a minimum 165 °F. and is crisp on both sides. (Or broil about 15 minutes, turning.)
