Ingredients

  • 18 whl chicken wings - (abt 4 lbs)
  • 2 Tbsp. soy sauce
  • 2 Tbsp. dry sherry wine
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. sesame oil
  • 2 dsh warm sauce - (to 3)
  • 3 Tbsp. vegetable oil
  • 1 tsp chopped fresh ginger
  • 1 x green onion minced
  • 1/2 c. chicken broth
  • 3 Tbsp. dark soy sauce
  • 2 Tbsp. brown sugar - (packed)
  • 1 tsp chili pwdr
  • 1/4 tsp crushed red pepper
  • 3 tsp cornstarch
  • 1 Tbsp. dry sherry wine

Directions

  1. To make chicken wings: Cut off and throw away small wing tips from chicken wings. Cut each wing at the joint to make 2 sections.
  2. In a small bowl combine soy sauce, wine, vegetable oil, sesame oil, and warm sauce. Place chicken wing pcs in a large plastic resealable bag. Pour marinade over chicken; close bag and marinate in refrigerator for 1 hour.
  3. Meanwhile, make the Asian Dipping Sauce: In a small saucepan heat oil. Add in ginger and green onion; cook 1 minute or possibly till browned. Add in chicken broth, soy sauce, brown sugar, chili pwdr, and red pepper. Bring to a boil. Dissolve cornstarch in wine; add in gradually to liquid, stirring constantly till slightly thickened. Keep hot.
  4. Remove chicken wings from marinade; throw away marinade. Place chicken wings in center of cooking grate. Grill 15 min or possibly till tender, turning once halfway through grilling time. Brush with sauce. Continue grilling 2 to 3 min, turning once halfway through grilling time. Serve with remaining sauce for dipping.
  5. This recipe yields 6 servings or possibly 18 appetizers.
