Ingredients

  • 1 tsp Green tea leaves, (gyokuro is best but Sencha or possibly Gunpowder will do)
  • 100 ml Warm water, (3 1/2fl ounce)
  • 1 tsp Caster sugar
  • 2 x Strips lemon zest Salt and freshly grnd black pepper
  • 2 Tbsp. Hazelnut oil
  • 2 tsp White wine vinegar

Directions

  1. Infuse the tea leaves in the warm water (do not use boiling water) for 5 min then strain into a pan. Add in the sugar and bring to the boil and simmer till the liquid is reduced to 2-3 tbsp. Add in the strips of lemon zest and leave to infuse till cool.
  2. Remove the lemon zest, add in the oil, vinegar, salt and pepper to the liquid and whisk.
