Green Tea Salad Dressing
Ingredients
- 1 tsp Green tea leaves, (gyokuro is best but Sencha or possibly Gunpowder will do)
- 100 ml Warm water, (3 1/2fl ounce)
- 1 tsp Caster sugar
- 2 x Strips lemon zest Salt and freshly grnd black pepper
- 2 Tbsp. Hazelnut oil
- 2 tsp White wine vinegar
Directions
- Infuse the tea leaves in the warm water (do not use boiling water) for 5 min then strain into a pan. Add in the sugar and bring to the boil and simmer till the liquid is reduced to 2-3 tbsp. Add in the strips of lemon zest and leave to infuse till cool.
- Remove the lemon zest, add in the oil, vinegar, salt and pepper to the liquid and whisk.
