Green Goddess Dressing

Created during the 1920's at the Palace Hotel in San Francisco, in honor of George Arliss, who was starring in the play "The Green Goddess."

Goes Well With: Boston Lettuce Salad

Ingredients

  • 1 Cup Mayonnaise
  • 1 green onion, coarsely chopped
  • 1 garlic clove, coarsely chopped
  • 2 parsley sprigs, coarsely chopped
  • 2 tablespoons tarragon vinegar (or 2 tablespoons white wine vinegar and 1/2 teaspoon dried tarragon or 2 teaspoons fresh)
  • 1 tablespoon anchovy paste
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt

Directions

  1. In a food processor or blender, combine all ingredients and process until well blended.
  2. Cover and refrigerate until ready to use.
