Ingredients

  • 1 c. romaine lettuce
  • 1/2 c. spinach
  • 1 x radish diced
  • 4 Tbsp. sundried tomatoes
  • 3 Tbsp. extra virgin olive oil
  • 1 Tbsp. balsamic vinegar
  • 1/2 lb goat cheese

Directions

  1. Slice goat cheese, brush with oil and broil till golden brown.
  2. Serve on top of salad with diced radish and sundried tomatoes. Drizzle with oil and vinegar.
