Goan pork and potato curry

Here is my Goan pork and potato curry, very nice flavours. Almost like a mild vindaloo.

Ingredients

  • 2 tsp black mustard seeds
  • 1 tsp whole cumin seeds
  • 2 tsp whole coriander seeds
  • 3 cloves
  • 1 tsp cayenne pepper
  • 2 tsp paprika
  • 1/2 tsp ground turmeric
  • 1/2 tsp black pepper
  • 4 medium Waxy potatoes (Peeled)
  • 5 cloves garlic
  • 1 red onion
  • 1 inch of ginger
  • 1/2 tsp sugar
  • 1 tsp salt
  • 1lb boneless pork shoulder
  • 1 1/2 pints water
  • 2 tbsp cider vinegar

Directions

  1. In a spice grinder, grind the cumin, coriander, cloves cayenne pepper, paprika, turmeric, black pepper and 1/2 the whole mustard seeds until smooth powder. (Set aside)
  2. Finely dice the onion, garlic cloves & grate the ginger using fine grater. (Set aside)
  3. Chop potatoes and pork into Roughly 1 inch chunks (set aside)
  4. Place pan on medium heat, add 3tbsp oil, Add the remaining whole mustard seeds ( these will pop), then add the onions, ginger & garlic Straight after. Fry for Around 3mins until They start to turn golden. Add the Ground spices & pork shoulder fry this for another 10 mins. Add the water potatoes salt sugar & vinegar. Cover reduce heat to low and cook for around an hour until meat it tender.
