Goan pork and potato curry
Prep: 15 min Cook: 60 min Servings: 4by Mike1 recipe>Here is my Goan pork and potato curry, very nice flavours. Almost like a mild vindaloo. Ingredients
- 2 tsp black mustard seeds
- 1 tsp whole cumin seeds
- 2 tsp whole coriander seeds
- 3 cloves
- 1 tsp cayenne pepper
- 2 tsp paprika
- 1/2 tsp ground turmeric
- 1/2 tsp black pepper
- 4 medium Waxy potatoes (Peeled)
- 5 cloves garlic
- 1 red onion
- 1 inch of ginger
- 1/2 tsp sugar
- 1 tsp salt
- 1lb boneless pork shoulder
- 1 1/2 pints water
- 2 tbsp cider vinegar
Directions
- In a spice grinder, grind the cumin, coriander, cloves cayenne pepper, paprika, turmeric, black pepper and 1/2 the whole mustard seeds until smooth powder. (Set aside)
- Finely dice the onion, garlic cloves & grate the ginger using fine grater. (Set aside)
- Chop potatoes and pork into Roughly 1 inch chunks (set aside)
- Place pan on medium heat, add 3tbsp oil, Add the remaining whole mustard seeds ( these will pop), then add the onions, ginger & garlic Straight after. Fry for Around 3mins until They start to turn golden. Add the Ground spices & pork shoulder fry this for another 10 mins. Add the water potatoes salt sugar & vinegar. Cover reduce heat to low and cook for around an hour until meat it tender.
