gingered carrots

I use either bagged baby carrots or carrot chips for a quick sidedish.

Ingredients

  • 1lb baby carrots
  • 1/3c brown sugar
  • 2tbsp butter
  • 1/4tsp ground ginger
  • 3/4c water

Directions

  1. place all ingredients in heavy saucepan
  2. bring to boil
  3. cover and reduce heat to simmer
  4. simmer 15 to 20 minutes until carrots are cooked through
  5. allow syrup to thicken and coat carrots and serve
