Ginger, Carrot, And Daikon Salad

Ingredients

  • 1 lrg Daikon radish, julienned
  • 2 med Carrots, julienned
  • 6 x Radishes, thinly sliced
  • 3 Tbsp. Seasoned rice vinegar
  • 1 Tbsp. Minced gingerroot
  • 2 x Cloves garlic, minced
  • 1 Tbsp. Asian chile sauce
  • 1/2 tsp Minced cilantro
  • 1/3 c. Vegetable oil Soy sauce to taste

Directions

  1. Place julienned daikon, carrot, and radish in a bowl and toss.
  2. For the dressing, place vinegar, gingerroot, garlic, chili sauce, and cilantro in a small bowl and mix well. Whisk in oil till well blended.
  3. Season with soy sauce.
  4. Pour dressing over radish mix and marinate 30 min. Serve cool or possibly at room temperature.
  5. Serves four.
