Giggling Gourmet's Homemade Chicken Soup

Here's a dish I have been fine tuning for years. It's a hearty chicken soup that dishes a good medicine if someone in your family is not feeling well...or...you just enjoy a good soup! I make this for my wife anytime she is not feeling well and it gets her going again by the next day! In the picture you will see sliced fresh Jalapeno Pepper floating around in the bowl...I am a hot pepper nut so I enjoy adding this to the soup after it is served. The pepper tastes good served fresh (not cooked) in there, and hot peppers are not always for everyone, so I add it in the end. Do this at your own discretion!

Ingredients

  • 1 lb Boneless Skinless Chicken Breast Cubed
  • 1 Tbs Sofrito
  • 1 Can Garden Broth
  • 1 Can Chicken Broth
  • 4 Celery Stalks Chopped
  • 1 Cup Baby Carrots
  • 1 Cup Corn
  • 1 Cup String Beans
  • 1 Parsnip Chopped
  • 1 Turnip Chopped
  • 1 Yellow Onion Chopped
  • 5 Cloves Garlic Diced
  • 1/4 Cup Scallion Chopped
  • 1/2 Tsp Red Pepper Flakes
  • 1 Tbs Worschestier Sauce
  • 2 Tbs Red Wine Vinegar
  • 1/4 Tsp Oregano Leaves
  • 1/4 Tsp Basil
  • 2 Bay Leaves
  • 1 Tsp Dried Chives
  • 1/2 Tsp Dried Cilantro
  • 1 Tbs Fresh Dill
  • 1/4 Tsp Smoked Paprika
  • 1 1/2 Tbs Adobo
  • 1 Cup Rice (uncooked)
  • Jalapeno Pepper*** (Optional)
  • Loaf of Good Bread!

Directions

  1. In soup pot add, Sofrito, Chicken, Chicken Broth, Garden Broth and water until pot is just shy of 3/4s full and begin to warm.
  2. Add celery, carrots, corn, string beans, parsnip, turnip, onion, garlic, scallion, red pepper flakes, Worschestier sauces, red wine vinegar, oregano, basil, bay leaves, chives, cilantro, dill, paprika and Adobo and cover, reduce heat and simmer for 2-3 hours.
  3. Add uncooked rice, cover again and cook for 30 minutes longer before serving.
  4. Serve with some really good bread, my wife like's fresh ground pepper flakes across the top, or, that Jalapeno Pepper if you want to add some fire and enjoy!
