Ingredients

  • 1 can tomato soup (10 3/4 ounce)
  • 1 c. water
  • 1 Tbsp. wine vinegar
  • 1 lrg clove garlic chopped croutons
  • 1 Tbsp. extra virgin olive oil
  • 1 c. cucumber finely minced
  • 1/8 c. green bell pepper finely minced
  • 1/4 c. onions finely minced

Directions

  1. In bowl, combine soup, water, oil, vinegar and garlic. Refrigerate4 hrs. Serve in chilled bowls. Pass chilled vegetables and crisp croutons for garnishes.
