Ingredients

  • 16 x Red lettuce leaves
  • 8 x Watermelon slices --
  • 1/4 x "thick
  • 8 x Cantaloupe slices --
  • 1/4 x "thick
  • 4 x Kiwis -- peeled and sliced
  • 3 x Oranges, peeled -- Sectioned
  • 8 x Apples -- center core Removed
  • 8 scoop sherbet (1/3 c each)
  • 8 sm Bunches grapes
  • 8 x Fresh strawberries -- Sliced HONEY-LIME DRESSING-----
  • 8 ounce Low-fat plain yogurt
  • 2 Tbsp. Honey
  • 2 tsp Lime juice pn Ginger

Directions

  1. Place red lettuce leaves on individual salad plates and arrange the following in a pinwheel pattern; watermelon, cantaloupe, honeydew, diwi. In the center of the pinwheel place cored apple. Place sherbet scoop on apple.
  2. Put grapes beside the apple. Top with Honey-Lime Dressing (recipe follows) and garnish with sliced strawberries. Honey-Lime Dressing: Combine yogurt with honey, lime juice and ginger. Whip and chill.
  3. Makes 1 c.; 1 serving =2 Tbsp.. Exchange Pattern for Salad and Dressing
