Fruit and Vegetable Salad with Toasted Almonds

Ingredients

  • 1/2 tray of ripe strawberries, cut into half
  • 1/2 pc cantaloupe
  • 1 pomelo, peeled, seeded and cut into pieces
  • 1/4 cup of seedless grapes, cut into half
  • 1 pc Mandarin orange, sliced
  • 4 pcs cherry tomato, cut into half
  • 1/2 head Broccoli florets, blanched
  • 1/2 cup of Mescal
  • 2 tbsp of toasted sliced almonds
  • 1/2 cup of dressing
  • dressing ingredients:
  • 1 pc onion
  • 2 cloves of garlic
  • 1 pc labuyo, seeded and chopped (Thai pepper)
  • 1 tsp salt
  • 2 tbps patis (fish sauce)
  • 1/2 tsp ground black pepper
  • 4 tbsp roughly wrapped wansuy
  • 2 tbsp sherry vinegar
  • 4 tbsp freshly sqeezed calamansi or lemon
  • 1/4 cup of pure coconut milk

Directions

  1. Prepare all the fruits and vegetables and chill in the refrigerator for atleast an hour.
  2. Place the dressing in a mixing bowl and toss in the chilled and drained fruits and vegetables.
  3. Sprinkle toasted almonds on top of the salad.
  4. To make the dressing:
  5. Place all the dressing ingredients in a blender and puree.
  6. Check seasoning, taste should be a balance of sweetness, tartness, and hotness.
