Dhal Yogurt Soup

A bit tangy, a bit buttery and fully aromatic.

Ingredients

  • 1 cup masoor dhal (or you would like to explore with other types) - soften by soaking for about 1 hour
  • 2 tomatoes (medium size) - sliced
  • 1 inch ginger - crushed/bruised
  • 5 garlic -crushed/bruised
  • 2 tbsp yogurt
  • 2 tbsp butter (ghee or oil will do too)
  • 2 sprigs coriander leaves
  • 2 sprigs curry leaves
  • Salt for taste

Directions

  1. Sauté ginger and garlic in heated butter.
  2. Add dhal and tomatoes.
  3. Stir and pour in 1/2 litre of water (more water if you like).
  4. Stir and simmer till dhal is softened.
  5. Season with salt; add curry and coriander leaves.
  6. When soup is heated through, add yogurt.
  7. Stir in and remove from heat.
