Ingredients

  • 6 lrg Hard-boiled Large eggs, shelled
  • 1/4 c. Finely minced liquid removed oil-packed sun-dry tomatoes
  • 1/4 c. Chopped fresh chives
  • 1 Tbsp. Extra virgin olive oil
  • 1 1/2 tsp Chopped fresh thyme
  • 1 tsp White wine vinegar Additional liquid removed oil-packed sun-dry tomatoes, cut into strips

Directions

  1. Here's a nice way to use up those leftover hard-boiled Easter Large eggs.
  2. Cut Large eggs lengthwise in half. Scoop yolks into medium bowl. Mash yolks coarsely with fork. finely chop 2 egg white halves; mix into yolks. Add in minced sun-dry tomatoes and next 4 ingredients; mix well. Season with salt and pepper. Spoon about 1 Tbsp. filling into each egg half, mounding slightly. Top with tomato strips. (Can be made 8 hrs ahead.
  3. Cover; chill.)
  4. Makes 10.
