Ingredients

  • 1 med cucumber
  • 1 x scallion (spring onion), green and white parts, finely minced
  • 1 c. (250 ml) plain yogurt
  • 3 Tbsp. (45 ml) minced fresh mint leaves
  • 2 Tbsp. (30 ml) extra virgin olive oil
  • 1/2 tsp (2 ml) grnd cumin Cayenne pepper to taste (optional) Salt and freshly grnd pepper to taste

Directions

  1. Cut the cucumber in half lengthwise, scoop out and throw away the seeds.
  2. Chop the cucumber finely and combine with the remaining ingredients.
  3. Serve with raw vegetables or possibly bread for dipping.
  4. Makes about 2 c.
  5. (500 ml), to serve 6 to 8.
  6. Serve with fresh vegetables batons.
