Cucumber And Mint Dip
Ingredients
- 1 med cucumber
- 1 x scallion (spring onion), green and white parts, finely minced
- 1 c. (250 ml) plain yogurt
- 3 Tbsp. (45 ml) minced fresh mint leaves
- 2 Tbsp. (30 ml) extra virgin olive oil
- 1/2 tsp (2 ml) grnd cumin Cayenne pepper to taste (optional) Salt and freshly grnd pepper to taste
Directions
- Cut the cucumber in half lengthwise, scoop out and throw away the seeds.
- Chop the cucumber finely and combine with the remaining ingredients.
- Serve with raw vegetables or possibly bread for dipping.
- Makes about 2 c.
- (500 ml), to serve 6 to 8.
- Serve with fresh vegetables batons.
