Ingredients

  • 14 ounce canned black beans liquid removed
  • 1/2 c. chopped onion
  • 1 Tbsp. chopped garlic
  • 1 tsp extra virgin olive oil
  • 1/2 tsp grnd cumin
  • 3 c. cooked rice salt and pepper
  • 1 c. salsa

Directions

  1. In a large nonstick skillet, stir black beans, onions, garlic, extra virgin olive oil, and cumin over med-high heat 5 min. Add in rice. Season with salt and pepper. Cover and heat through. Top with salsa.
  2. Serves 4.
