Cuban Black Beans And Rice
Ingredients
- 14 ounce canned black beans liquid removed
- 1/2 c. chopped onion
- 1 Tbsp. chopped garlic
- 1 tsp extra virgin olive oil
- 1/2 tsp grnd cumin
- 3 c. cooked rice salt and pepper
- 1 c. salsa
Directions
- In a large nonstick skillet, stir black beans, onions, garlic, extra virgin olive oil, and cumin over med-high heat 5 min. Add in rice. Season with salt and pepper. Cover and heat through. Top with salsa.
- Serves 4.
