Ingredients

  • 1 x 16 ounce pkg frzn whole kernel corn, thawed
  • 1 x 10 ounce pkg frzn sliced okra, thawed
  • 1 x 10 ounce pkg baby lima beans, thawed
  • 1 med onion, diced
  • 2 x cloves garlic, chopped
  • 3 x 5.5 ounce cans V-8 vegetable juice, (no salt added)
  • 2 x 14.5 ounce cans Cajun-style stewed tomatoes
  • 1 c. water
  • 3 Tbsp. vegetable broth concentrate, (Knorr makes some)
  • 1 tsp warm sauce
  • 1 tsp vegetarian Worcestershire sauce

Directions

  1. Combine all ingredients in a 5-qt crockpot. Cook, covered, on high for 5 to 6 hrs.
