Ingredients

  • 10 lbs fresh red blish potatoes
  • 1 quart pesto
  • 2 cups parmesan cheese

Directions

  1. preheat broiler - line baking sheet with heavy duty foil
  2. place hot potatoes and pesto in a large bowl - toss and coat
  3. spread otatoes on baking sheet
  4. broil about 5 inches from heat for 10-12 minuted or until potatoes are lightly browned
