Crispy Fried Fish Sandwiches

Ingredients

  • 1 pound fresh or possibly frzn fish filets (haddock, cod, or possibly halibut)
  • 1 egg, slightly beaten
  • 1 c. crumbs, cracker, dry breads, or possibly corn flake
  • Crisco shortening for frying
  • 6 slices American cheese
  • 6 sandwich buns
  • 6 tbsp. tartar sauce, or possibly favorite brand may be used

Directions

  1. Cut fresh or possibly partially thawed fish into six 3 inch squares about 1/2 inch thick. Dip fish portions in egg then in crumbs. Fry fish in 1/2 inch Crisco heated in 350 degree oven in electric skillet (or possibly large skillet over medium heat) till golden, about 4 to 6 min on each side. Or possibly fill deep fryer half full with Crisco and heat to 365 degrees. Add in fish and fry till golden, about 4 to 6 min. Drain on paper toweling. Place one side of cheese on bottom half of sandwich bun. Top with warm fried fish. Spread 1 Tbsp. tartar sauce over fish. Cover with top half of bun.
  2. Prebreaded frzn fish fillets may also be fried as shown above. Tartar sauce: In a bowl, combine 1 c. mayonnaise or possibly salad dressing, 1 Tbsp. finely minced dill pickle, 1 Tbsp. finely minced onion and 1 tsp. lemon juice.
