Creamed Spinach Omelet


This is a nice Friday night dinner.

Ingredients

  • 6 eggs – plus a splash of half and half
  • 9 oz. box of frozen creamed spinach
  • ¼ cup grated parmesan cheese
  • ½ Spanish onion – sliced
  • ¼ red onion – sliced
  • 1 tablespoon of butter
  • Drizzle of olive oil

Directions

  1. Preheat Oven 300 degrees:
  2. Heat a frying pan with a drizzle of olive oil and a tablespoon of butter.
  3. Add the onions and the frozen creamed spinach and let the spinach melt.
  4. Beat the eggs with a splash of half and half and ¼ cup of grated parmesan cheese.
  5. When the onions are transparent and the spinach is melted add the eggs. Top with a little more cheese and a dash of chili powder, black pepper and a dash of garlic powder.
  6. Let the omelet set on the stove and finish cooking it in the oven.
