Cracked Dungeness Crab With Spinach Dipping Sauce

Ingredients

  • 1 x dungeness crab - (2 to 3 lbs) thawed if necessary
  • 1/3 c. dairy lowfat sour cream
  • 1/3 c. mayonnaise
  • 1/2 c. torn spinach leaves see * Note
  • 2 x parsley sprigs stems removed
  • 1 Tbsp. lime or possibly lemon juice
  • 1/4 tsp basil crushed Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Note: Torn romaine lettuce may be substituted.
  2. Lift off back shell of crab. Remove and throw away viscera and gills. Rinse crab thoroughly under cold running water. Break off legs; crack along edges. Break body section in half; break each half into several pcs. Microcook or possibly steam till thoroughly heated; cold and chill till served.
  3. Blend remaining ingredients in food processor or possibly blender till smooth. Refrigerateat least 1 hour to blend flavors. Serve crab with sauce.
  4. This recipe yields 3 to 4 servings.
  5. Comments: Serve crab with small forks or possibly picks to remove crab meat from shell.
