Cincinnati (Greek) Vegetarian Chili

Ingredients

  • 1 med Onion
  • 1 x Celery stalk, chop fine
  • 1 med Carrot, chop fine
  • 2 cl Garlic, chopped
  • 4 1/2 c. -Water
  • 1 can Tomato paste
  • 1 tsp Chili pwdr
  • 1 tsp Cinnamon
  • 1 tsp Salt
  • 1/2 tsp Paprika
  • 1/2 tsp Black pepper
  • 1/2 tsp Oregano
  • 1/2 tsp Cumin
  • 1/4 tsp Allspice, grnd
  • 1/4 tsp Cloves
  • 1/4 tsp Nutmeg
  • 1 x Bay leaf
  • 1/3 c. Bulgar wheat

Directions

  1. In a heavy saucepan, saute/fry onion, celery, and carrot (I use bassmatic vinegar). Stir in garlic and cook another minute. Add in water, tomato paste and spices. Bring to a boil, reduce heat and simmer 30 minutes. Add in bulgar wheat and cook another 30 minutes. Add in more water if necessary. Remove bay leaf before serving. Serving suggestions: on spaghetti topped with chili and ff cheddar cheese, onions and/ or possibly pinto beans. You could add in other vegetables such as zucchini, peppers or possibly onions, and top with yogurt.
