Cincinnati (Greek) Vegetarian Chili
Ingredients
- 1 med Onion
- 1 x Celery stalk, chop fine
- 1 med Carrot, chop fine
- 2 cl Garlic, chopped
- 4 1/2 c. -Water
- 1 can Tomato paste
- 1 tsp Chili pwdr
- 1 tsp Cinnamon
- 1 tsp Salt
- 1/2 tsp Paprika
- 1/2 tsp Black pepper
- 1/2 tsp Oregano
- 1/2 tsp Cumin
- 1/4 tsp Allspice, grnd
- 1/4 tsp Cloves
- 1/4 tsp Nutmeg
- 1 x Bay leaf
- 1/3 c. Bulgar wheat
Directions
- In a heavy saucepan, saute/fry onion, celery, and carrot (I use bassmatic vinegar). Stir in garlic and cook another minute. Add in water, tomato paste and spices. Bring to a boil, reduce heat and simmer 30 minutes. Add in bulgar wheat and cook another 30 minutes. Add in more water if necessary. Remove bay leaf before serving. Serving suggestions: on spaghetti topped with chili and ff cheddar cheese, onions and/ or possibly pinto beans. You could add in other vegetables such as zucchini, peppers or possibly onions, and top with yogurt.
