Chocolate Belgian Waffles

These waffles are crispy on the outside and soft and chewy on the inside. Top them with sliced bananas, berries and whipped cream or with maple syrup. Delicious!

Ingredients

  • 3 cups all purpose flour or cake flour
  • 3 tbsp white sugar
  • 1 tbsp plus 1 tsp baking powder
  • 1/2 cup cocoa powder (I use Fry)
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 2 1/2 cup buttermilk (see my note to make buttermilk) at room temperature
  • 1/2 cup melted butter
  • 3 eggs beaten, at room temperature

Directions

  1. In a large bowl, combine the flour, baking powder, baking soda, cocoa powder and salt. Set aside.
  2. Whisk together the buttermilk, eggs and butter in another bowl. Pour wet ingredients into dry ingrédients. Whisk to combine. Let waffle batter rest for 5 to 10 minutes before using.
  3. Warm up your waffle maker following manufacturer's instructions.
  4. Ladle or pour enough batter into waffle maker to cover 2/3 of grid surface. Close the lid. Cook until steam stops emerging from the waffle maker or until the waffles are crisp about 5 minutes. Makes 10 waffles.
  5. HOW TO MAKE BUTTERMILK QUICKLY:
  6. Pour 1 tbsp of fresh lemon juice or white vinegar into a measuring cup. Add milk (whole, 2% or 1%) up to the 1 cup mark. Allow to sit at room temperature for 5 to 10 minutes). MAKE A DOUBLE BATCH PLUS 1/2 CUP TO USE IN THIS RECIPE.
