Chocolate Belgian Waffles

- 3 cups all purpose flour or cake flour
- 3 tbsp white sugar
- 1 tbsp plus 1 tsp baking powder
- 1/2 cup cocoa powder (I use Fry)
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 2 1/2 cup buttermilk (see my note to make buttermilk) at room temperature
- 1/2 cup melted butter
- 3 eggs beaten, at room temperature
Directions
- In a large bowl, combine the flour, baking powder, baking soda, cocoa powder and salt. Set aside.
- Whisk together the buttermilk, eggs and butter in another bowl. Pour wet ingredients into dry ingrédients. Whisk to combine. Let waffle batter rest for 5 to 10 minutes before using.
- Warm up your waffle maker following manufacturer's instructions.
- Ladle or pour enough batter into waffle maker to cover 2/3 of grid surface. Close the lid. Cook until steam stops emerging from the waffle maker or until the waffles are crisp about 5 minutes. Makes 10 waffles.
- HOW TO MAKE BUTTERMILK QUICKLY:
- Pour 1 tbsp of fresh lemon juice or white vinegar into a measuring cup. Add milk (whole, 2% or 1%) up to the 1 cup mark. Allow to sit at room temperature for 5 to 10 minutes). MAKE A DOUBLE BATCH PLUS 1/2 CUP TO USE IN THIS RECIPE.
