Chilled Cucumber And Cilantro Soup

Ingredients

  • 1 lrg cucumber (abt 1 lb) peeled, and cut into chunks
  • 1 1/4 c. low-sodium chicken broth
  • 3/4 c. cilantro leaves - (firmly packed)
  • 1/2 c. nonfat or possibly lowfat lowfat milk
  • 1/4 c. lemon juice Salt to taste

Directions

  1. In a food processor or possibly blender, combine cucumber, broth, cilantro, lowfat milk, and lemon juice; whirl till smoothly pureed. Season puree to taste with salt. Cover and chill till cool (at least 2 hrs) or possibly till next day.
  2. To serve, ladle into bowls.
  3. This recipe yields 4 servings.
