Chicken Soup

This chicken soup recipe is one of the first soups I ever learned to make. I started making this soup when I was away in college. I remember eating it for 3 days straight! It really goes a long way.
There is nothing better than eating homemade chicken soup. It is sooo soothing to your soul!

  • 1 Whole Chicken, if soup is for a large family, or you can use chicken thighs if soup is for 1-4 people. I recommend using meat with a bone.

  • 2-3 Celery Sticks, Chopped
  • 2-3 Medium Sized Carrots, Chopped

Directions

  1. Wash and Clean the Whole Chicken, remove the neck, organs from the cavity. Dry with a paper towel.
  2. Fill a dutch oven half way with water.
  3. Place the whole chicken or parts in a dutch oven.
  4. Boil the chicken for about 30 minutes, or until done.
  5. Remove cooked chicken onto a plate. Let it cool.
  6. In the meantime, if you want a clearer broth, strain the broth into another saucepan/ dutch oven.
  7. Add the chopped celery and carrots. Cook on medium-low for about 10 minutes.
  8. Add the handful of fideos, vermicelli, or egg noodles.
  9. Cook until the fideos are soft.
  10. In the meantime, chop the chicken meat and return to dutch oven.
