CHERRY AND COCONUT CAKE

This really easy spongy,cake is of unusual combination of cherries and coconut.But it works out well and the cake tastes delsih.

Ingredients

  • 125 gm buttre
  • 1/2 tsp vailla essence
  • 1/2 cup castor sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 cup grated coconut
  • About 1/4 cup milk
  • 1/2 cup chopped cheries
  • Icing sugar

Directions

  1. Cream butter,vanilla and sugar until pale and soft.Beat in eggs one at a time.
  2. Sift flour and baking powder together.Fold sifted ingerdients into creamed mixture.
  3. Stir in the coconut and sufficient milk to make a soft batter.
  4. Lightly grease and line a microwave ring mould.Sprinkle cherries over the base of the mould.
  5. Pour batter on top.Elevate and microwave on high power for about 6 mins or unitl just set.
  6. Leave to stand 10 mins before turning on to a cooling rack.
  7. Dust with icing when cold.
