CHERRY AND COCONUT CAKE
This really easy spongy,cake is of unusual combination of cherries and coconut.But it works out well and the cake tastes delsih. Ingredients
- 125 gm buttre
- 1/2 tsp vailla essence
- 1/2 cup castor sugar
- 2 eggs
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/2 cup grated coconut
- About 1/4 cup milk
- 1/2 cup chopped cheries
- Icing sugar
Directions
- Cream butter,vanilla and sugar until pale and soft.Beat in eggs one at a time.
- Sift flour and baking powder together.Fold sifted ingerdients into creamed mixture.
- Stir in the coconut and sufficient milk to make a soft batter.
- Lightly grease and line a microwave ring mould.Sprinkle cherries over the base of the mould.
- Pour batter on top.Elevate and microwave on high power for about 6 mins or unitl just set.
- Leave to stand 10 mins before turning on to a cooling rack.
- Dust with icing when cold.
