Ingredients

  • 2 eggs
  • 2/3 cup sugar
  • 1 tsp vanilla
  • 8 squares (1 oz. each) white baking chocolate, melted and cooled
  • 1/3 cup butter, melted
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 to 1 cup chopped salted salted cashews or pecans

Directions

  1. In a large mixing bowl, beat the eggs, sugar, and vanilla on medium speed for 1 minute.
  2. Beat in the chocolate and butter.
  3. Combine the flour, baking powder, and salt.
  4. Gradually add to the chocolate mixture.
  5. Stir in the cashews
  6. Spread into a greased 9-inch square baking pan
  7. Bake at 350 F for 25-30 minutes or until a toothpick inserted near the center comes out clean.
  8. Cool on a wire rack.
  9. Cut into bars
