Ingredients

  • 1 rotisserie chicken, bones and skin removed
  • 1 TBSP Cajun seasoning
  • 2 TBSP butter
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 small pkg fresh mushrooms, sliced
  • 1/2 cup sliced onions
  • 2 cups heavy cream
  • 1/2 tsp dried basil
  • 1/2 tsp lemon pepper seasoning
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 4 oz. linguini, cooked and drained
  • 1/2 cup grated Parmesan cheese

Directions

  1. Add Cajun seasoning to cooked chicken shake to coat
  2. In a large skillet over medium heat, add butter and sauté peppers, mushrooms and onion
  3. Cook and stir for 3 minutes.
  4. Add seasoned chicken
  5. Reduce heat
  6. Add cream and seasonings
  7. Heat through
  8. Add cooked linguine and toss
  9. Heat through and add Parmesan to thicken
