Broiled Chicken With Mustard Tomato Sauce

Ingredients

  • Nonfat cooking spray as needed
  • 1 x chicken - (3 lbs) cut in pcs, and skin removed
  • 1 Tbsp. butter
  • 1 x onion minced
  • 2 Tbsp. flour
  • 1 1/2 c. low-sodium chicken broth boiling
  • 2 Tbsp. tomato paste
  • 2 tsp Worcestershire sauce
  • 1 tsp sugar
  • 1 tsp dry mustard

Directions

  1. Heat broiler or possibly grill. Spray rack. Spray chicken pcs. Broil 30 min, turning often, and spraying again at each turn.
  2. Heat butter in saucepan. Add in onion and saute/fry till limp. Sprinkle with flour and cook, stirring, 2 to 3 min. Remove from heat and add in boiling broth, beating vigorously with wire whisk to prevent lumping. Return to heat and cook, stirring, till smooth and thick.
  3. Stir in tomato paste, Worcestershire sauce, sugar, and mustard. Serve over broiled chicken.
  4. This recipe yields 4 servings.
