Broiled Chicken With Mustard Tomato Sauce
Ingredients
- Nonfat cooking spray as needed
- 1 x chicken - (3 lbs) cut in pcs, and skin removed
- 1 Tbsp. butter
- 1 x onion minced
- 2 Tbsp. flour
- 1 1/2 c. low-sodium chicken broth boiling
- 2 Tbsp. tomato paste
- 2 tsp Worcestershire sauce
- 1 tsp sugar
- 1 tsp dry mustard
Directions
- Heat broiler or possibly grill. Spray rack. Spray chicken pcs. Broil 30 min, turning often, and spraying again at each turn.
- Heat butter in saucepan. Add in onion and saute/fry till limp. Sprinkle with flour and cook, stirring, 2 to 3 min. Remove from heat and add in boiling broth, beating vigorously with wire whisk to prevent lumping. Return to heat and cook, stirring, till smooth and thick.
- Stir in tomato paste, Worcestershire sauce, sugar, and mustard. Serve over broiled chicken.
- This recipe yields 4 servings.
- Serving size: 1/4 recipe.
