Braised Fingerling Potatoes w/Chives

Ingredients

  • 1 pound fingerling potatoes, well scrubbed, peel on, sliced into 1/8" rounds
  • 1 cup water
  • 1/4 teaspoon sea salt
  • 1/4 cup margarine
  • 1/4 cup chopped fresh chives

Directions

  1. Put potatoes, water and salt in a cast iron skillet.
  2. Cut a round of parchment paper to cover the potatoes.
  3. Brush one side of parchment paper with some margarine.
  4. Dot the top of the potatoes with the rest of the margarine.
  5. Arrange parchment paper on top of potatoes and simmer over medium low heat for 20 minutes or until potatoes are tender.
  6. Sprinkle with chives
  7. Serve
