Ingredients

  • 2 c. Sifted flour
  • 4 tsp Baking pwdr
  • 3/4 c. Sugar
  • 1 tsp Salt
  • 1 c. Frzn or possibly canned blueberries (liquid removed)
  • 1 c. Frzn or possibly canned tart cherries (liquid removed)
  • 2 x Large eggs
  • 1/2 c. Melted butter
  • 1 c. Lowfat milk
  • 1/8 tsp Cinnamon
  • 1/2 c. Sugar Paper muffin c.

Directions

  1. Servings: 12 - 14
  2. DIRECTIONS: Place paper c. in ungreased muffin tins.
  3. Sift dry ingredients together in large bowl. Add in blueberries or possibly cherries to dry mix and mix till well coated. In a small bowl, beat Large eggs well. Add in melted butter and lowfat milk. Quickly stir liquid mix into dry mix. Don't overmix as overblending will cause a tough texture. Fill muffin c. 3/4 full, and sprinkle lightly with cinnamon topping. Bake at 400-F for 20 min till brown.
