2 c. Cooked black runner beans
2 c. Cooked Wehani rice
1 c. Finely-diced crunchy celery
1 c. Diced mango
1/4 c. Finely-diced red onion
1/2 c. Packed cilantro minced
1/3 c. Dressing made with extra virgin olive oil, white wine vinegar and toasted chili pwdr Salt to taste Freshly-grnd black pepper to taste
Directions
Mix the ingredients together and season with salt and pepper.
