Black Runner Bean, Rice And Mango Salad
Ingredients
- 2 c. Cooked black runner beans
- 2 c. Cooked Wehani rice
- 1 c. Finely-diced crunchy celery
- 1 c. Diced mango
- 1/4 c. Finely-diced red onion
- 1/2 c. Packed cilantro minced
- 1/3 c. Dressing made with extra virgin olive oil, white wine vinegar and toasted chili pwdr Salt to taste Freshly-grnd black pepper to taste
Directions
- Mix the ingredients together and season with salt and pepper.
- This recipe yields 4 servings.
