Black Bean Salsa

This is quick and easy dish which is a must in summer time or picnic time.

Ingredients

  • 1 cans ( 15 oz.) black beans (drained and rinsed)
  • 2 lg. tomatoes (diced)
  • 1 red onion ( finely diced)
  • 1-2 jalapeno peppers ( seeded and diced fine)
  • 1 green pepper ( seeded and diced fine)
  • 1 17 oz.. frozen corn
  • 1/2 tsp. cumin
  • 3 pieces chopped cilantro
  • 1 T. lime juice
  • 1 cup Balsamic Vinaigrette dressing

Directions

  1. Partially cook corn, drain and set aside
  2. Combine all ingredients.
  3. Let stand for about 20 minutes to allow the flavors to combine
  4. Serve as a scoop dip or salad
